    Date Balls

    The Ayurveda Experience February 10, 2017

    Ingredients:

    1 oz Sunflower seeds
    1 oz Coconut
    8 (4 oz) Pitted Medjool* dates
    For Vata dosha and Pitta-Kapha dosha: 1 oz Walnuts
    For Pitta dosha, Pitta-Vata dosha and Vata-Pitta dosha: 1 oz Pumpkin seeds

    Recipe:

    1. Blend the nuts and seeds in a food processor for about two minutes until they change into a smooth nut butter.
    2. We’re now ready to put the dates in. What I like to do is to drop one date at a time while the food processor is running, because this gives the best texture.
    3. You might have noticed that, as the dates were put in, they began to bunch up along the sides. That’s your sign that they’re getting really well mixed and the paste is ready. After ensuring that the nuts, seeds, and dates have blended evenly together, you can make balls with your hands or put the paste into a small bowl, refrigerate it for some time, and then cut it into squares.
    4. To make the balls, just take about a tablespoon scoop of the mix – which is really soft and pliable – and mold it with your fingers.
    5. You could take the date balls and coat them with some flaked coconut to get a nice texture and taste.

    You will enjoy having the date balls anytime you need a quick boost of energy. These have sugar, protein and fat, so the sugars in them are released slowly over time. The nuts bring in so many different mineral sources. This is a great treat when you need to get fuel for your afternoon, or really any time of the day.

    1 serving = 2 to 3 date balls

    * The Medjool dates are nice and grounding and have a rich, dense flavor. If you’re using different dates, you might want to use about twice as much.
